Nose
Dark honey & pecan
Toasted pecan, dark honey, orange oil, and a thread of tobacco leaf underneath.
Mr. Dan1els — 1984 Bourbon
House No. 06
Kentucky straight bourbon whiskey, small batch, laid down in char-three American oak and left in the upper ricks until the wood is finished speaking.
The Whiskey
A high-rye mash bill — corn, rye, malted barley — distilled to a low proof off the still so the grain survives, then filled into new char-three American white oak at 103 proof.
Barrels go to the upper ricks, where the summer heat is unkind and the extraction is fast. We pull small batches of eighteen to twenty-two barrels at a time, marry them for a fortnight, and bottle at cask strength or 96 proof, non-chill filtered.
Tasting
Nose
Toasted pecan, dark honey, orange oil, and a thread of tobacco leaf underneath.
Palate
Cinnamon and clove from the rye, brown sugar, char, and a dry oak spine that keeps it from sweetness.
Finish
Leather, cocoa nib, and warm spice that stays a good while after the glass is down.
The Expressions
Small Batch at 96 proof for the everyday pour. Cask Strength, uncut, for the ones who want the barrel unedited. And Single Barrel, chosen one cask at a time by the house.
Allocations are released twice a year to clients of the house before anyone else hears about them.
